Ingredients:

La Boquería & Mercat de Santa Caterina

Wandering around the markets of Barcelona–which is an essential activity for any food lover who visits–you’re confronted with sights and sounds and smells that’ll haunt you forever. I may one day forget the spires of the Sagrada Familia, but I’ll never forget my time wandering the aisles and aisles of fresh fish (so fresh, some of it’s still moving!), eggs placed out on piles of hay, and cuts of meat so stark and unfamiliar, they’d probably frighten Francis Bacon. What follows are a bunch of pictures I snapped wandering around the markets, with some occasional commentary.



















Ok, I promised commentary, but most of those pictures spoke for themselves–don’t you think? But here, we’ve arrived at the ham stall—the one all the way at the back of La Boqueria.
On our first day in Barcelona, I told Craig we had to try some Iberian ham. It’s the ham food lovers go crazy for–they try to sneak it back into the US and get beaten by security agents at customs, just for one last taste–the ham made from pigs fed a special diet of acorns. So here, at the back of the Boqueria, at a ham stall, I told the counter person: “Yo quiero Jamon Iberico.” Not knowing how to translate, I said: “One slice.”
She called to a man with a long knife and the man reached for a giant hanging leg of pig. I studied the leg as he began to carve and noticed that, of all the Iberian ham hanging there, this one was the most expensive: let’s say it said 110 Euros a pound.
“Oh no!” I said to Craig. “What if he cuts a really thick piece and it costs $200!!”
“Nothing you can do about it now,” counseled a wise Craig.
Well he cut a thin piece and the total came to 10 Euros. That’s about $15 for one thin slice of ham!!
But what a slice it was:

Salty, nutty, sweet—it was worth every penny. And thus concludes our tour of the Barcelona markets, the heart and soul of Barcelona.
And Den Der Was Dominica
I arrived by plane to Dominica, but I left by sailboat. Neat. Very neat. I like that kind of travel – in and out and all a little on the sly (it feels). I’ve wanted to hit Dominica forever – ever since I saw a cute cottage there a few years back that was for sale…and almost prompted me to sell all and move there. Just based on the pictures alone. So, this little island was a perfect starting point for me to venture out from via sailing vessel. Another potential place to die in off the list, I say.
The wind is different in Dominica – cool/balmy wind, full of mystery. And, the whole island looks just like all my fave places in Indo – which made me incredibly happy upon arrival. Green, lush, overgrown with wildlife. Of course my cabbie gave me a history of the whole island and we had to make a few pitstops on the way for him to grab some giant flowers for his wife (they just grow wild everywhere and he gets her some once a week from one of the hill villages) and drop a few of his work buddies off. I swear, I could ride in cabs all day and really think my travel would be taken to a whole new localized level.
I met up with the good Captain Norman and his woman Alison at a small bar in Roseau…they were having beers with a young British lad name Tim. That one was leaving the next morning and I could feel his sheer delight in being hours away from hopping off the boat (6 weeks is a long time, eh)? We slammed a few, caught up on the plan and headed over to the boat, via skiff. Massive 1-ton, fume-spitting skiff…no dink for this couple.
Funny to think how people come together in the world. You just meet up on the road somewhere and before you know it, you’re discussing plans, ideas, projects, histories, dreams, fears. It’s like there are no barriers or walls – you can just be free and open and flow.
Next day, I was off exploring, while they were provisioning and checking emails…let’s just say there was a lot of hootin’ and hollerin’ going on since I was a single chick cruising alone. But underneath the catcalls was a genuine want to connect. A hiss, then a hearty laugh. Jarring. I’m flipping coins left and right to pay for my rice and peas and a drinker at the bar corrects my math, seems I’d overpaid. Thx – very generous. Kindness is in everyone, I think, you just gotta make a mistake in front of them and their desire to help comes out in spades. Refreshing. I buy an little perfume in the incense store, the owner calls me back in to give me some free incense “cause she likes my shirt and I’m a very nice person.” What goes around, comes right back at cha…

Reynolds Handi-Vac Campaign
Well, it sucks. Reynolds will continue production of his handi-Vac. I bought the starter system around six months ago, and found it was pretty good and preventing freezer-burn. It also made thawing frozen meat and fish very easily and faster than things frozen without the advantages of vacuum sealing. The best way to thaw frozen protein is to put them to cool, moving water ie a large container, with a little water from the tap while the food thaws. Removing air from the bag means that you had more surface area of meat or fish available to interact with water. It took just minutes to digest steaks, chops or fish fillets stored this way.
The Hani-Vac as do a good job and vacuum sealing of the more expensive rigs? Probably not, but for what I want, it is just fine. It is also dirt cheap. I think the starter system costs around $ 13. Hell, it is only $ 16 dollars now. -I thought the idea was to make a profit in the bag replacement, but I remember that all that expensive either. Well, they are now. $ 34.99 for 9 gallon-sized bags from a re-seller on Amazon.

But if you visit the My Label, you’ll see they only have bags gallon, and are “to Buy.” There was a comment on the Amazon page for the gallon bags that suggested it was not a perfect system under any circumstances.
Also I tried with another bag of produce; the Ziploc1 vacuum freezer. My first attempt seems to work, but it is not as good as vacuum bags Reynolds, and I see it as a permanent replacement. I need to see picking up one of the pumps Ziploc, I suppose, but instead of battery strength, it is a hand bomb, and I see it does work as well.
Reynolds bought the product on the idea that in addition to doing a better job of things cold, I also try a little sous vide cooking at some point. Not happened, and now it seems I shit out of luck, in general.
